Instant Pot Egg Bites Without Cottage Cheese
Ingredients
- 4 pcs eggs
- 2 tbsp milk
- 2 tomatoes, chopped (plus extra for serving)
- 1 clove garlic, minced
- 1/2 cup mozzarella cheese, shredded
- 4 tbsp parsley, chopped (plus extra for garnish)
- Salt to taste
- Black pepper
- Cooking spray
Instructions
- Gather all the ingredients for your Instant Pot egg bites.
- In a bowl, whisk the eggs with a pinch of salt and pepper.
- Stir in the chopped tomatoes and cheese.
- Add the parsley and gently mix. Avoid overmixing.
- Spray your egg bites mold with cooking spray.
- Fill each cup about three-quarters full with the egg mixture.
- Pour 1 cup of water into the Instant Pot.
- Place the trivet in the Instant Pot and lower the egg bites mold onto it.
- Secure the lid, set to Sealing, and select Pressure Cook. Cook on High pressure for 8 minutes.
- When cooking is done, let the pressure release for 5 minutes, then move the steam release valve to Venting to release any remaining pressure.
