Gather all the ingredients for your Instant Pot egg bites.
In a bowl, whisk the eggs with a pinch of salt and pepper.
Stir in the chopped tomatoes and cheese.
Add the parsley and gently mix. Avoid overmixing.
Spray your egg bites mold with cooking spray.
Fill each cup about three-quarters full with the egg mixture.
Pour 1 cup of water into the Instant Pot.
Place the trivet in the Instant Pot and lower the egg bites mold onto it.
Secure the lid, set to Sealing, and select Pressure Cook. Cook on High pressure for 8 minutes.
When cooking is done, let the pressure release for 5 minutes, then move the steam release valve to Venting to release any remaining pressure.
Once the floating valve drops, you can remove the lid. Wear oven mitts to grab the trivet and remove the mold.
Turn the egg mold onto a plate and gently push out the egg bites. Garnish with extra parsley and serve with fresh tomatoes. Enjoy!
