  • In a bowl, whisk the eggs with a pinch of salt and pepper.

  • Fill each cup about three-quarters full with the egg mixture.

  • Secure the lid, set to Sealing, and select Pressure Cook. Cook on High pressure for 8 minutes.
  • When cooking is done, let the pressure release for 5 minutes, then move the steam release valve to Venting to release any remaining pressure.
  • Once the floating valve drops, you can remove the lid. Wear oven mitts to grab the trivet and remove the mold.

Notes

  • You can make a double batch of Instant Pot egg bites without cottage cheese by using twice as many ingredients and increasing the cooking time to 10 minutes. But because you'll use two molds, make sure to slightly turn the top mold so the molds are staggered and prevent misshapen egg bites.
  • Don't skip the cover, as the condensation can drip onto the egg bites and make them soggy. You can use a sheet of aluminum foil if your silicone mold has no lid.
  • It's possible to make Instant Pot egg bites without a mold! Just use a steamer basket and silicone muffin cups. Place the steamer basket in the pressure cooker, add 1 and 1/2 cups of water, divide the egg mixture into four silicone muffin liners, place them on the steamer basket, cover, and cook on High Pressure for 8 minutes. Turn the Instant Pot off after the timer beeps, then use a quick pressure release after 2 minutes.
