Smoky Carrot Dip
Ingredients
- 1 lb carrots, sliced
- 1/2 yellow onion, chopped
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cumin
- 1/4 cup hazelnuts
- 1 orange, juiced and zested
- 1 tbsp tomato paste
- 1/4 cup olive oil
- 1/4 cup parsley, chopped
- 1 tbsp ginger
- 1/4 tsp red pepper flakes
Instructions
- Gather all the ingredients for your smoky carrot dip.
- Heat olive oil in a pan over medium heat. Add the chopped onions and cook for about 5 minutes, or until soft.
- Stir in the cinnamon and cumin, then cook for a few minutes until fragrant. Add the carrots and cook for about 15 minutes, until soft and lightly caramelized.
- Let the carrots cool slightly, then transfer them to a food processor along with the hazelnuts, orange juice, orange zest, tomato paste, olive oil, parsley, ginger, and red pepper flakes.
