For the crust:
- 8 graham crackers, crushed into fine crumbs
- 4 tbsp unsalted butter, melted
- 1 1/2 tbsp granulated sugar
- 1/2 tsp cinnamon

Instructions
- Preheat the oven to 300°F. To make the mini cheesecakes easier to remove, line the muffin tin with cupcake liners.
- Combine the crushed graham crackers, sugar, and cinnamon. Add the melted butter and mix with a fork until the crackers are evenly moistened.
- Press the graham cracker mixture evenly to the bottom of the muffin tin cups. Set aside.
- Beat the cream cheese on medium speed until smooth and creamy, about 2 minutes. Add the powdered sugar and almond extract and beat until incorporated.
- Reduce the speed to low and add one egg white at a time, mixing until just combined.
- Divide half of the cheesecake mixture among the muffin tin cups.
