- 4 oz dark chocolate chips
- 1/2 stick unsalted butter
- 1/2 cup all-purpose flour
- 1/4 tsp baking soda
- 1/4 cup Dutch-process cocoa powder
- 1/4 tsp kosher salt
- 1 large egg
- 3/4 cup granulated sugar
- 1/2 tsp instant espresso powder
- Sea salt flakes for topping
For the salted caramel ice cream:
- 1 cup salted caramel sauce
- 2 cups whole milk
- 5 egg yolks
- 1 cup heavy whipping cream
Instructions
Ice cream sandwich cookies:
- Preheat the oven to 325ยฐF and line a baking sheet with parchment paper.
- Microwave the chocolate chips and butter in 20-second intervals, stirring between intervals until completely melted and smooth.
- Sift the dry ingredients together. Set aside.
- In another bowl, combine the egg and sugar.
- Whisk in the melted chocolate mixture until combined.
- Fold in the flour mixture with a spatula.
- Scoop out the cookie dough. Place the cookies on the prepared baking sheet about 2 inches apart. Top them with sea salt flakes.
- Bake the sea salt chocolate cookies for 13 to 15 minutes or until their tops are cracked.

- Churn the ice cream in the ice cream maker forย 25 to 30 minutes, or until it is similar to soft-serve ice cream.
- Transfer the ice cream to a container, cover it, and freeze for at least 2 hours.
- To assemble a cookie ice cream sandwich, flip a cookie over and top with a scoop of salted caramel ice cream. Spread the ice cream evenly towards the edges of the cookie.
- Top with another chocolate cookie, then press the sea salt caramel ice cream sandwich together. Continue with the rest of the cookies and ice cream.
- Return the ice cream sandwiches to the freezer. Freeze for 1 hour to firm up before serving. Enjoy!
