- 3 cucumbers, diced
- 1 bunch celery, thinly sliced
- 1 15-oz can chickpeas, drained and rinsed
- 1/3 cup feta cheese crumbles (plus extra for garnish)
- 1 avocado, cubed
For the dressing:
- 1/2 cup fresh dill, chopped
- 1/2 lemon, juiced
- 2 cloves garlic, minced
- 1 small shallot, peeled and chopped
- 1 tbsp Dijon mustard
- 1 tbsp red wine vinegar
- 1/2 cup olive oil
- Salt to taste
