mango pie copycat

Ingredients:

– 2 pcs pie crusts – 1 egg, beaten – 1 tbsp heavy cream – 3/4 cup mangos, cut into cubes – 3/4 cup peaches, cut into cubes – 1/2 cup granulated sugar – 2 tbsp cornstarch – 1 tbsp lemon juice – 1/8 tsp salt – 1/4 tsp cinnamon – 1/2 tsp vanilla extract – Flour for dusting the work surface

HOW TO MAKE:

In a saucepan, cook chopped mangoes, peaches, sugar, cornstarch, lemon juice, salt, and cinnamon over medium-high heat, stirring occasionally.

Dust work surface with flour, roll out pie crust, and cut into rounds using a 3.5-inch cookie cutter.

Whisk heavy cream and egg for the egg wash. Brush around the filling of each pie crust round.

Top with remaining rounds and press edges to seal. Cut vent slits on top and brush with egg wash.

Arrange hand pies on baking sheet and bake for 25 minutes until golden brown.
