Ingredients
Beef filling:
- 2 tbsp olive oil
- 1 cup onion, chopped
- 1 lb 85% lean ground beef

- 1 tsp rosemary
- 2 tsp parsley
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 2 tbsp all-purpose flour
- 1 cup beef broth
- 1 cup frozen peas and carrots
- 1/2 cup frozen corn
Mashed potato topping:
- 1 1/2 lbs Russet potatoes, peeled and cubed
- Water for cooking the potatoes
- 1/3 cup half and half
- 8 tbsp unsalted butter
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp garlic powder
- 1/4 cup Parmesan cheese, grated
- Non-stick cooking spray
Instructions
- Lightly coat the slow cooker with nonstick cooking spray and set aside.
- Heat the oil in a skillet over medium-high heat for about 2 minutes.
- Add the onions and cook for 5 minutes, stirring occasionally, until softened.
- Add the ground beef along with the herbs and seasonings. Cook for 6 to 8 minutes, breaking up the meat and stirring occasionally, until browned. Drain any excess grease.
