- 1 lb smoked sausages, sliced
- 4 15-oz cans black eyed peas (do not drain)
- 2 10-oz cans diced tomatoes and green chilies (do not drain)
- 3 cups beef broth
- 1 cup white onion, chopped
- 3/4 cup green bell peppers, chopped
- 1/2 tsp garlic powder
- 1/2 tsp ground black pepper
- 2 tsp Cajun seasoning
- 1 1/2 cups boil-in-bag rice, uncooked
Instructions
- Gather all the ingredients for your slow cooker Hoppin John.
- Brown the sausage slices in a skillet over medium-high heat. Once theyโre nicely caramelized, transfer them to the Crockpot.
