Preheat the oven to 350°F and grate the Parmesan cheese.
In a mixing bowl, combine half of the grated Parmesan, olive oil, garlic, parsley, red pepper flakes, and salt. Mix until it forms a paste-like consistency.
Slice each potato in half. Score the cut sides with criss-cross slits to help them cook evenly.
Toss the scored potato halves in the Parmesan mixture until well coated.
Spread the remaining Parmesan on a plate and press the potatoes onto it for extra coating.
Grease a baking dish with cooking spray.
Arrange the potatoes in a single layer on the dish and sprinkle with more Parmesan cheese on top.
Bake for 40 minutes, or until the potatoes are brown and tender. Serve and enjoy!
