Rinse the strawberries and pat them dry with paper towels. Set aside to make sure they're completely dry before coating.
Melt the white chocolate until smooth. For convenience, just pop the white chocolate in the microwave and melt in 30-second bursts at regular power, stirring between each, until smooth.
Hold each strawberry by its stem, then dip it into the melted white chocolate. Let the excess coating drip back into the bowl for a few seconds.
Place the dipped strawberries on a parchment-lined baking sheet. Let them set completely, about 20 minutes.
Melt the candy melts separately according to package instructions. Transfer each melted candy melt into its own ziplock bag. Press out the air, seal, and snip a small corner.
Drizzle the melted blue candy over the white chocolate coated strawberries in a quick back-and-forth motion.
Follow with the melted red candy in the same motion. While the drizzles are still wet, scatter patriotic sprinkles over the strawberries.
Allow the finished red white and blue strawberries to set before serving, about 20 minutes. To speed things up, feel free to refrigerate them for 15 minutes!
