Whip the heavy cream until soft peaks form. Divide the whipped cream into 3 separate bowls.
Leave the first portion of whipped cream plain for the white layer.
In the second portion of whipped cream, stir in a few drops of blue food coloring and vanilla stevia until evenly distributed for the blue layer.
In the third portion of whipped cream, fold in the strawberries and berry stevia for the red layer.
Pour the blue mixture into the popsicle molds and freeze for 20 minutes to set.
Add the white cream mixture. Freeze for another 20 minutes.
Finally, pour in the red strawberry mixture. Insert the popsicle sticks and freeze the molds for 4 to 6 hours.
To loosen and release the red white and blue popsicles easily, run the molds under warm water for a few seconds before pulling them out.
