  • Warm a skillet over medium heat and lightly brush it with oil.
  • Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.

  • Flip the purple pancakes once the edges look set and defined. Cook the other side for about half the time as the first side.

Notes

  • Ube treats like these purple pancakes are loved for their signature purple hue. To avoid brown pancakes, cook them over medium-low heat so they don’t brown too quickly. You can also add 1 to 2 teaspoons of ube extract to really make their color pop.
