Gather and measure all the ingredients for your purple pancakes.

In a separate bowl, mix the flour, ube powder, baking powder, sugar, and salt.
Warm a skillet over medium heat and lightly brush it with oil.
Add the dry ingredients to the wet ingredients and stir until just combined. Do not overmix.
Scoop the batter into the warm skillet to make several mini ube pancakes. Do not overcrowd the pan.
Flip the purple pancakes once the edges look set and defined. Cook the other side for about half the time as the first side.
Serve the ube pancakes with a drizzle of chocolate syrup, then top with blueberries and sprinkles.
