Mango Popsicles

  • Wash the mangoes and peel them.
  • Cut the mangoes into cubes.
  • Pour the lime juice into the mangoes and stir.
  • Add in the honey and coconut milk.
  • Blend into your desired consistency—smooth, chunky, or somewhere in between.
  • Taste and adjust with more lime juice or honey.
  • Pour the mango mixture into the popsicle molds, leaving some allowance at the top for expansion. Add the sticks, cover, and freeze for at least 4 hours before serving.

Notes

  • Select mangoes with smooth skins—no blemishes or punctures! They are also ripe enough if they smell sweet and feel soft when gently squeezed.
  • Make layered popsicles with different fresh fruit mixtures! These mango popsicles will go well with pineapple and strawberry. Just alternate tablespoons of the fruit mixtures in the molds and swirl.
  • Dip the mold in a pan of warm water for a few seconds to loosen the popsicles.
