Pour the flour, sugar, baking powder, and salt into a bowl. Combine the dry ingredients.
Stir in the egg, milk, butter, and vanilla extract. Whisk until combined. Do not overmix. Having a few remaining lumps on the pancake batter is OKAY.
Spray the egg bites mold. Pour the batter into the mold until about 3/4 full.
You can also add a few berries (or any add-in of your choice) into each mold cup. Just make sure that each cup won't be over 3/4th full.
Cover the egg bites silicone mold with its cover. Then, cover again with aluminum foil. Make sure to wrap it around the edges tightly.
Add 1 and a half cups of water to the Instant Pot insert. Next, place the trivet.
Put the pancake mold on the trivet. If you made a big batch, you can stack two molds at a time.
Close the lid, and set the sealing valve to ‘sealed.' Select high pressure, Pressure Cook / Manual, and set the Instant Pot for 8 minutes.
Once done, release the steam naturally for 5 minutes before manually releasing the rest.
Remove the pancake mold from the Instant Pot and uncover it.
Turn the mold over on a plate. Tap the bottoms of the cups gently to remove the pancake bites from the mold.
