  • Whip the egg white with an electric hand mixer on high speed until frothy.
  • Add the sugar and mix again until the mixture turns white and soft peaks form.

Notes

  • Love a hot matcha latte? Heat your milk in the microwave in 30-second intervals, then add the whipped matcha. For a chilled version, simply add a handful of ice cubes to your milk of choice before topping it with the matcha foam.
  • Whip the egg white on its own first. Sugar can interfere with the foam’s structure if added too soon!
  • To avoid a gritty consistency on your whipped matcha, always sift your matcha before adding it to the whipped egg white.
