  • Preheat the oven to 350°F. Line the cookie sheets with parchment paper.
  • Combine the dry ingredients in a small bowl.
  • Beat the softened butter, brown sugar, and white sugar in a large bowl for two minutes until creamy.
  • Stir the eggs, salt, and vanilla into the butter mixture.
  • Pour the flour mixture into the wet ingredients and mix them together.
  • Stir in the crispy bacon pieces and chocolate chips. Add as much as desired.
  • Take tablespoon-sized scoops of cookie dough and arrange them on the parchment-lined baking sheets 3 inches apart in a single layer.
  • Bake the bacon chocolate chip cookies for 10 to 12 minutes or until the edges are lightly toasted.
  • Once the chocolate chip bacon cookies are lightly golden, remove the pan from the oven. Let the cookies sit on the sheets for 3 minutes.
  • Move the freshly baked cookies to the wire racks to cool completely for 2 minutes.

Notes

  • Overmixing the dough can cause the bacon chocolate chip cookies to become dense!
  • Add 1 teaspoon of bourbon whiskey extract to the wet ingredients for complexity.
  • Drizzle these chocolate bacon cookies with a quick maple glaze. To make enough glaze for a dozen cookies, combine 1 1/2 cups of powdered sugar, 2 tablespoons of maple syrup, and 1 to 2 tablespoons of milk.
