Preheat the oven to 400°F. Line your baking sheet with parchment paper.
Wash the potatoes under running water. Scrub them with a brush to get rid of any hidden dirt. Rinse again, then pat dry with a paper towel before peeling.
Cut off the ends and sides of the peeled potatoes to create a rectangular shape. Cut the rectangles lengthwise, so you'll end up with potato slices about 1 inch thick.
Place the sliced potatoes in a bowl of cold water while you finish cutting the rest.
Place a potato slice flat between a pair of skewers. Cut straight lines down the potato.
Flip the potato over and cut diagonal lines across the whole slice, making sure you're not slicing all the way through. Repeat with the remaining potato slices.
Gently stretch the potato accordions out.
Rinse the accordion potatoes in a bowl of water. Dry them with paper towels.
Push a skewer through each accordion slice.
Combine melted butter, minced garlic, parsley, Italian seasoning, pepper, paprika, and salt in a bowl. Using a brush, coat both sides of the potato accordions with the mixture.
Arrange the accordion potato skewers in a single layer on the lined baking sheet. Bake in the preheated oven for 30 minutes or until golden brown and crispy on the edges, flipping halfway through.
Cool for a few minutes before serving. Enjoy!
