– 1 1/4 cup all-purpose flour – 2 tsp baking powder – 1/2 tsp salt – 2 tbsp brown sugar – 2 1/2 tsp pumpkin pie spice – 1 cup whole milk – 1/3 cup pumpkin puree – 1 egg, room temperature – 2 tbsp unsalted butter, melted – Non-stick cooking spray
1. Whisk the dry ingredients together and set aside. 2. Mix the milk, pumpkin puree, egg, and melted butter until combined. 3. Fold the wet ingredients into the flour mixture. Do not overmix; just stir until everything is incorporated. 4. Let the pumpkin pancake batter sit for 10 to 15 minutes.
5. If using a pancake griddle, preheat it to 350°F. If using a skillet, spray it with cooking spray and bring to medium heat. 6. Pour 1/4 cup of batter for each pancake into the hot skillet or griddle. 7. Flip the pancakes once their edges are starting to set and bubbles are appearing on top. Each side usually takes 3 minutes to cook.
