Moin Moin Recipe

Ingredients:

– 1 ½ cups Ewa oloyin or black-eyed peas – 1 medium-sized red bell pepper or Tatashe pepper – 1 Scotch Bonnet pepper – ¾ cup diced onion – 2 tbsp crayfish – ¼ cup vegetable oil – ¾ cup cooked fish, minced – 4 pcs hard-boiled eggs – Seasoning powder to taste

HOW TO MAKE:

Soak beans for about an hour. Blend beans briefly to peel them.

HOW TO MAKE:

Separate peeled beans from skins. Blend peeled beans with peppers and onion until smooth.

HOW TO MAKE:

Combine with crayfish, oil, seasoning, and minced fish. Prepare banana leaves in pot or greased ramekins.

HOW TO MAKE:

Fill leaves or ramekins with mixture, adding egg and fish.

HOW TO MAKE:

Steam for 45 minutes to 1 hour. Check with toothpick for doneness.

What to serve with it?

Enjoy it alongside Nigerian rice dishes like Jollof rice and fried rice or maybe with a hearty stew. 😋
