Easy Chicken

– 1 cup brown rice, cooked – 1 1/2 cup ground chicken – 8 pcs lettuce leaves – 1 cup cucumber, sliced – 1 cup jicama, diced – 1/4 cup peanut butter – 2 tbsp soy sauce – 2 tbsp honey – 1 tbsp sesame oil – 1 tbsp olive oil – 1 tbsp water – 1 tbsp garlic, minced – 1 tbsp ginger, minced – 1 tbsp serrano pepper, minced – 1/4 cup green onion, sliced with white and green parts separated – 1/2 cup parsley – 1 lime, cut into wedges for serving

HOW TO MAKE:

Sauté the white part of the green onions, ginger, garlic, and serrano pepper for 2 minutes or until soft.

HOW TO MAKE:

Add the chicken to the pan and cook for 3 to 4 minutes, breaking up clumps with a spatula.

Whisk together peanut butter, soy sauce, honey, sesame oil, and water in a bowl.

Add the green part of the green onions and jicama to the pan. Stir until combined and coated with the sauce.

Place brown rice and chicken mixture on two lettuce leaves per wrap. Top and serve: Top with cucumber slices and chopped parsley.
