Steak Gorgonzola

Ingredients:

FOR THE STEAK: – 2 pounds sirloin steak medallions – 1 cup Italian dressing – 1 tablespoon balsamic vinegar – 3 tablespoons olive oil – 3 tablespoons butter – 1 tablespoon chopped fresh rosemary – Salt, to taste – Black pepper, to taste FOR THE FETTUCCINE ALFREDO: – 2 cups heavy cream – 1 pound fettuccine, cooked and drained – 2 cups spinach – ½ cup (1 stick) unsalted butter – 1 cup freshly grated parmesan cheese – 4 ounces crumbled gorgonzola cheese – ½ teaspoon garlic powder – ¼ teaspoon nutmeg – Salt, to taste – Black pepper, to taste

Ingredients:

FOR THE BALSAMIC GLAZE: – 1 cup balsamic vinegar – ¼ cup brown sugar FOR THE GARNISHING: – ¼ cup sliced sun-dried tomatoes – 2 ounces crumbled gorgonzola cheese

HOW TO MAKE:

Mix salad dressing, balsamic vinegar, rosemary, salt, and pepper in a ziptop bag. Add steak, seal, and marinate for 30 minutes.

HOW TO MAKE:

Boil 1 cup balsamic vinegar and brown sugar in a saucepan. Reduce heat and simmer, stirring until reduced by half. Cool to thicken.

HOW TO MAKE:

Melt butter in a saucepan. Mix in heavy cream, nutmeg, salt, pepper, and garlic powder. Boil, then reduce heat. Stir in gorgonzola and parmesan until melted and thickened. Toss in pasta and spinach.

Heat skillet with olive oil and butter. Cook steak 2-3 minutes per side.

HOW TO MAKE:

Serve steak over fettuccine Alfredo. Garnish with sun-dried tomatoes, balsamic glaze, and more gorgonzola.
