Gather the ingredients.
Whisk the dry ingredients together. Set aside.
Mix the milk, pumpkin puree, egg, and melted butter until combined.
Fold the wet ingredients into the flour mixture. Do not overmix.
Let the pumpkin pancake batter rest for 10 to 15 minutes.
If using a griddle, preheat it to 350°F. If using a skillet, spray it with cooking spray and heat it over medium heat.
Pour 1/4 cup of batter for each pancake onto the hot skillet or griddle.
Flip the pancakes once the edges begin to set and bubbles appear on the surface. Each side usually takes about 3 minutes to cook.
