Preheat the oven to 350°F. Line the muffin pan with paper liners.
In a large bowl, combine the dry ingredients.
In a separate bowl, whisk the wet ingredients. Pour the wet mixture into the flour mixture.
Gently stir to form the batter. Do not overmix!
Fill each muffin cup about 2/3 full with the batter.
Bake the apple cider muffins for about 20 minutes.
Insert a toothpick into the center of a muffin. If it comes out clean, remove the pan from the oven.
Let the muffins rest in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
In a small bowl, mix the sugar and apple pie spice.
Dunk the tops of the muffins in melted butter so the sugar topping sticks.
Dip the muffin tops in the spiced sugar, and you're done. Enjoy!
