Ground Turkey

stuffed bell peppers

Ingredients:

– 2 bell peppers (we used red and green) – 1/2 lb ground turkey – 1 tbsp white onion, diced – 1/2 garlic clove, minced – Salt to taste – Ground black pepper to taste – 1/2 cup white rice, cooked – 1/2 can tomato sauce (15 oz. can) – 3/8 cup mozzarella cheese shredded – Avocado oil – Cilantro, chopped for garnish

HOW TO MAKE:

Heat oil in a skillet, sauté onion and garlic.

Add turkey, season with salt and pepper, cook.

Boil bell peppers until tender.

Mix cooked rice into turkey, add tomato sauce, and simmer.

Fill bell peppers with mixture, and top with cheese.

Bake covered for 10 mins, then uncovered for 15 mins.
