cider muffins

Ingredients:

–FOR THE APPLE MUFFINS: – 2 cups all-purpose flour – 2 tsp baking powder – 1 cup granulated sugar – 2 tsp apple pie spice – 1 tsp salt – 1/2 cup apple cider – 1/4 cup milk, room temperature – 2 eggs, room temperature – 2 tbsp oil FOR THE SPICED SUGAR TOPPING: – 1/4 cup unsalted butter, melted – 1 tsp apple pie spice – 3/4 cup granulated sugar

HOW TO MAKE:

Combine dry ingredients in a large bowl.

HOW TO MAKE:

Whisk wet ingredients in a separate bowl, then add to dry mixture.

HOW TO MAKE:

Stir until batter forms, avoiding overmixing.

HOW TO MAKE:

Fill muffin cups 2/3 full with batter. Bake for 20 minutes at 350°F.

 Let muffins rest in pan for 5 minutes, then transfer to wire rack to cool completely.

Combine apple pie spice and sugar in a bowl.

Dip muffin tops in melted butter, then in spiced sugar. Serve and enjoy!
