– 3 3/4 cups long-grain parboiled rice (Jasmine or Basmati) – 100g chopped cow liver, cooked with salt and lightly roasted in the oven – Whole chicken, cut into chunks and broiled until crispy – Chicken stock from cooking the whole chicken – 1/2 cup green beans – 1/2 cup peas – 1/2 cup corn – 3 pcs carrots, chopped – 3 pcs onions, chopped – 1 habanero pepper – 1/2 red bell pepper, chopped – 1/2 green bell pepper, chopped – 2 tbsp Nigerian curry powder – 3 pcs Knorr cubes – 1 tbsp thyme – 2 bay leaves – Salt to taste – Dash of parsley – Spring onions, chopped – Vegetable oil

HOW TO MAKE:

Wash parboiled rice and transfer to a pot.

HOW TO MAKE:

Add chicken stock and seasonings. Stir, cover, and cook for about 25 minutes until the liquid is absorbed.

Turn off the heat, keep the lid on, and fluff the rice after 5 minutes.

Heat oil in a skillet over medium heat. Sauté onions, add habanero pepper, then mixed vegetables and chopped liver.

Season and fry until dry and slightly crispy.
