White Chicken Chili

Ingredients:

– 1 1/2 lbs boneless skinless chicken thighs – 2 cans white beans, drained and rinsed – 1 can green chiles – 1 jalapeno, deseeded and chopped – 1 can corn kernels, drained – 2 celery ribs, chopped – 1 onion, diced – 2 garlic cloves, minced – 1 tsp salt – 1 tsp ground coriander – 2 tsp ground cumin – 2 cups chicken stock – 1/4 cup cream cheese – 2 tbsp lime juice – Tortilla chips for serving – 1/2 avocado for serving – Greek yogurt for topping – Cilantro for topping

HOW TO MAKE:

Place chicken and beans in the bottom of the slow cooker. Top with remaining ingredients.

HOW TO MAKE:

Cover and cook on low for 5 hours or until chicken is cooked.

Puree 2 cups of chili with cream cheese until smooth to thicken.

Return cream cheese-chili mixture and shredded chicken to slow cooker, adding lime juice.
