Lemon bars

Ingredients:

– 1/2 cup apple butter – 1/2 cup butter, room temperature – 2 cups granulated sugar – 1 egg, room temperature – 1 tsp vanilla extract – 2 3/4 cups all-purpose flour – 1/2 tsp baking soda – 1/2 tsp cream of tartar – 1/2 tsp salt – 1/2 tsp ground cinnamon – 1/4 cup granulated sugar for the coating – 1 tbsp ground cinnamon for the coating

HOW TO MAKE:

In a bowl, combine gluten-free flour, melted vegan butter, and erythritol (or sugar substitute).

Mix until a dough ball forms.

Press the dough into a baking pan to form an even crust.

Bake at 350°F (180°C) for 10-15 minutes or until golden brown.

In a medium saucepan, mix lemon juice, coconut milk, cornstarch, sweetener, and a pinch of turmeric (optional for color).

Whisk until cornstarch dissolves. Cook over medium heat, stirring constantly, until the mixture thickens.

HOW TO MAKE:

Pour the lemon filling over the baked crust in the baking pan. Smooth the filling with a spatula and bake at 350°F (180°C) for 30 minutes. Check readiness with a toothpick.

HOW TO MAKE:

Let the bars cool at room temperature for 30 minutes, then refrigerate for at least 1-2 hours or overnight before serving.
