jollof rice

– 1/3 cup vegetable oil – 6 plum tomatoes – 4 red bell peppers – 3 red onions – Habanero or Scotch Bonnet peppers to taste – 3 tbsp tomato paste – 2 tsp Nigerian curry powder – 1 tsp dried thyme – 2 bay leaves – 5 cups chicken stock – 4 cups long-grain rice, rinsed – Salt to taste – Pepper to taste

HOW TO MAKE:

Blend tomatoes, bell peppers, red peppers, onions, and 2 cups of stock until smooth.

HOW TO MAKE:

Transfer the mixture to a large pot and bring to a boil. Simmer the mixture for 10 minutes, partly covered.

HOW TO MAKE:

Heat vegetable oil in a pan, then stir-fry sliced onions and season with salt.

HOW TO MAKE:

Add curry powder, black pepper, thyme, and bay leaves to the onions. Cook for 3 minutes.

Stir in tomato paste, then add the tomato mixture to the pan. Cook for 10 minutes, partly covered.

HOW TO MAKE:

Add remaining stock to the pan and bring to a boil. Add rice, stir, cover with foil and lid, then cook for 30 minutes, stirring halfway through.

HOW TO MAKE:

Taste and season the jollof rice as needed. Allow the covered rice to rest for 5 minutes before serving.
