GATHER YOUR Ingredients
– 1 lb carrots, sliced – 1/2 yellow onion, chopped – 1/4 tsp ground cinnamon – 1/4 tsp ground cumin – 1/4 cup hazelnuts – 1 orange, juiced and zested – 1 tbsp tomato paste – 1/4 cup olive oil – 1/4 cup parsley, chopped – 1 tbsp ginger – 1/4 tsp red pepper flakes
1. Heat some olive oil in a pan. Cook the chopped onions over medium heat for 5 minutes or until soft. 2. Add the cinnamon and cumin to the onions and saute for a few minutes. Then, add the carrots to the pan and cook for about 15 minutes or until they caramelize and soften.
3. Allow the carrots to cool, then transfer them to a food processor with hazelnuts, orange juice, orange zest, tomato paste, olive oil, parsley, ginger, and red pepper flakes. 4. Puree the ingredients until smooth and spreadable.
