– 1 cup brown rice, cooked – 1 1/2 cup ground chicken – 8 pcs lettuce leaves – 1 cup cucumber, sliced – 1 cup jicama, diced – 1/4 cup peanut butter – 2 tbsp soy sauce – 2 tbsp honey – 1 tbsp sesame oil – 1 tbsp olive oil – 1 tbsp water – 1 tbsp garlic, minced – 1 tbsp ginger, minced – 1 tbsp serrano pepper, minced – 1/4 cup green onion, sliced with white and green parts separated – 1/2 cup parsley – 1 lime, cut into wedges for serving
1. Heat olive oil in a skillet over medium heat. Saute the white part of the green onions, ginger, garlic, and serrano pepper for 2 minutes or until soft. 2. Add the chicken to the pan and cook for 3 to 4 minutes.
3. Meanwhile, make the peanut sauce by whisking peanut butter, soy sauce, honey, sesame oil, and water together. 4. Pour the peanut sauce into the pan and cook for 3 minutes or until it thickens. Remove from heat.
5. Add the green part of the green onions and jicama and stir until everything is combined and coated with the sauce. 6. Assemble the lettuce wraps with the brown rice and chicken mixture. Use two lettuce leaves for each wrap. 7. Top with cucumber slices and chopped parsley.
