- Mushroom Lentil Bolognese Sauce
- 2 Tbsp olive oil
- ¼ Cup chopped onion
- 1 Garlic clove
- 1 Cup mushrooms, sliced
- 1 Cup lentils
- 1 Cup tomato sauce
- ½ Tsp oregano
- ½ Tsp onion powder
- ½ Tsp garlic powder
- Instant Pot Lentils
- 1 Cup lentils
- 2 Cups vegetable stock
- ½ Tsp oregano
- ½ Tsp garlic powder
- Pinch of salt
Instructions
Mushroom Lentil Bolognese Sauce
- Heat the olive oil in a saucepan over medium heat.
- Add the onion and garlic and cook until translucent, around 5 minutes.
- Add the mushrooms and cook for 2 minutes per side or until golden.
- Add the lentils, tomato sauce and spices and stir to combine.
- Bring to a gentle simmer and cook for 10 minutes.
- Remove from heat.
Instant Pot Lentils
- Add all the ingredients to the Instant Pot and stir to combine.
- Close the lid and the vent and set on high pressure for 10 minutes.
- Naturally, release steam. Open the lid and stir.
